Chicken Divan

Great for a potluck or family dinner! You can also assemble and freeze so you have it available for a quick week night meal.

What You Need:

I package (16oz) frozen broccoli florets

1 cup mayonnaise

2 cans cream of chicken soup

1 whole cooked chicken (deboned & shredded) or 3 cooked chicken breasts (shredded)

3t lemon juice

1/4-1/2t curry powder (to taste)

2 cups shredded cheddar

1 cup breadcrumbs

How To:

Thaw broccoli and drain as much of the liquid as possible. You want it to be pretty dry. Place in a 9×13 baking dish. Layer with chicken. Combine the mayo, soup, lemon juice and curry powder and spread over the chicken layer. Mix the cheese and breadcrumbs together and sprinkle over the whole casserole. Bake at 350 uncovered for 40 minutes. Serve over rice with a green salad. Enjoy!

Easy Peasy Baked Spaghetti

So being a mom of four and having to make my food budget stretch, I love it when I can make simple, easy, cheap AND nutritious meals for my family. Winner, winner, spaghetti dinner!

1 pound spaghetti thin or regular

1 pound Italian sausage or ground beef

1 jar of spaghetti sauce

4oz cream cheese softened

3-4 cups mozzarella cheese

How To:

Preheat oven to 350 degrees

Bring a pot of water to a boil, add the noodles.

While the water boils and the noodles cook, brown the meat in a pan. Drain the fat.

When the meat is cooked add the sauce and let it simmer for a couple of minutes.

Drain the pasta just short of al dente, as it will cook a little more when you bake it.

Return the noodles to the pan and add the meat mixture and the cream cheese. Stir until well combined.

Pour into a 9×13 pan, top with mozzarella and bake at 350 for about 10 minutes or until the top is melty and golden. Serve with a salad or steamed veggies. Enjoy!

Crispy Pork Chops

This recipe has become a family favorite around here! In fact it’s on the menu for tonight! They are easy, quick and delicious. Serve with mashed potatoes or potato wedges! Thank you Ree Drummond (Pioneer Woman) for your delightful recipe. I love you!

pork chops

  • 1 teaspoon seasoned salt, plus more for seasoning
  • 1 teaspoon ground black pepper, plus more for seasoning
  • 8 pork breakfast chops
  • 1 cup all-purpose flour
  • Cayenne pepper
  • 1/2 cup vegetable oil
  • 1-2 tablespoons butter

How To:

  • Salt and pepper both sides of the pork chops.
  • Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
  • Heat the vegetable oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.

Creamy Garlic Chicken

I’ve always said church ladies are the best cooks! It’s all of the potlucks we have! This recipe was given to me by a special lady when we lived in Alaska. It is a once and a while indulgent dish, and so worth the calories! Just do a few extra jumping jacks!

  • 4 boneless skinless chicken breasts (cut into bite size pieces)
  • 1C butter
  • 6 cloves garlic (finely chopped)
  • 32oz sour cream
  • 3C shredded parmesan cheese
  • 1T flour
  • 1T dried marjoram
  • 1t dried basil
  • 1t dried oregano

How to:

Melt one stick of butter in a deep skillet and add three cloves of garlic. Cook for a minute until fragrant.

Add the chicken to the pan and cook until browned. Take out the chicken and set aside. Add the rest of the butter and garlic to the pan.

In a separate bowl combine the sour cream, cheese, and flour. Once combined add to the melted butter and garlic mixture. Add herbs and chicken and let it simmer until chicken is cooked through, about 5 minutes. Serve over hot fettuccini noodles.

Quick and Easy Stromboli

If your family is anything like mine then pizza night is a weekly occurrence! If you are pinching pennies or want something a little different, this is a great option! It’s a fun activity for you to do as a family, the kids love adding their own fillings.

pizza dough
(I get mine from the grocery store deli. One ball make one large Stromboli or two individual size)
pizza sauce
mozzarella cheese
pizza toppings of your choice (if doing veggies cook them up to release some of the liquid before stuffing your dough)
How To:
Roll dough out relatively thin. Spread a very thin layer of pizza sauce over the dough (I make my own, but store bought works good too) sprinkle shredded mozzarella cheese over the dough leaving about a 1/4″ around the edges. Layer your pepperoni or whatever else you like for toppings (I find simple is best) Carefully roll it up from the long end. Tuck the ends under and pinch the seam that runs down the middle. Cut small air holes about 2″ apart along the top. Brush with olive oil sprinkle with a LITTLE garlic salt (optional). Put on a baking sheet and bake at 400 for approx 20mins until the Stromboli is golden brown and the cheese is bubbling out!! Let it sit for about 5 minutes before cutting it.
